Lacto-fermentation is one of the oldest food preservation methods in the world, used across cultures for thousands of years to create foods like sauerkraut, kimchi, pickles, miso, yogurt, and other traditional staples.

Despite the name, “lacto” does not refer to dairy. It refers to Lactobacillus and other lactic acid bacteria (LAB) - naturally occurring microorganisms that transform ingredients through fermentation, creating complex flavors, natural acidity, and a more dynamic food experience.

At Honey Vinegar Alchemy, our lacto-fermented hot sauces begin with our own handcrafted tropical whole fruit vinegars and are slowly fermented in small batches. This process creates sauces with layered flavor, balanced heat, vibrant acidity, and the unique character of each harvest.
